Yellow grease is the leftover cooking oil from restaurant fryers and griddles, and is among the most environmentally friendly renewable diesel feedstocks. This form of diesel is a drop-in replacement to petroleum diesel, blends extremely well with biodiesel, and offers lower emissions than the conventional alternative. Both the U.S. federal government and the state of California offer incentives for companies to make and sell renewable diesel.

With the price of yellow grease connected to the price of diesel we saw prices go down through the summer months as transportation waned in the aftermath of Covid-19. Since the end of August, however, the price of yellow grease has been rebounding as it trends upward despite the increase in supply from restaurants reopening. Subsidies have driven oil companies to invest in retrofitting their refineries to produce diesel made of yellow grease, driving an increase in demand for the feedstock.
