Enzymes in the eyes of the law

Enzymes are naturally occurring proteins, which are degraded in the intestine and consist of little more than amino acids. International legislation takes this into account, but as new and better enzymes are developed, countries need to have the systems in place to assess their safety rapidly, or progress will be impaired.
